Losing Steam on Meal Prep

We’ve been active members of meal prep Sunday for at least four years. There have been varying degrees of it over the years: (1) breakfast, lunch, dinner; (2) breakfast, dinner; (3) snacks plus dinner. In recent years, its been mostly dinner, save for a few overnight oats here and there. It was the only way to guarantee we ate before 8pm.

I know that the plateau I am currently in fitness wise has to do with my nutrition. I know that if I want to move the needle, I need to at the very least better prep my lunches for the week. Because despite working from home, I often find myself at 3pm before eating lunch and that’s usually some deli meat and a piece of fruit.

I’m just over it. Meal prep takes 2 hours for just dinners and that’s WITH both of us doing the work. Half of my brain is watching Dylan and trying to keep her entertained (she helps cook part of the time) and the other half is chopping, sauteeing, browning, etc.

Alexia Clarke released a beta nutrition program and she does all the hard work for you. Literally, she develops the menu for M-F with 3 meals and 2 snacks. She even types up the grocery list! Still can’t bring myself to follow it. Cannot explain why. I even BOUGHT the items needed for it one week, and then just used them differently.

I’ve thought about potentially splitting up the meal prep — doing all the dinners still on Sunday morning, but maybe doing lunch on Saturday, breakfast every few days. It almost feels more daunting that way.

Someone please give me some motivation!
